Precision cooling from Coolmation – the cooling specialist for the food processing sector – is now one of the key ingredients in premium lasagne production at a fresh pasta making facility in Wales.
As part of its ongoing growth and expansion, and as a key element in the production process, this chilled foods producer required a process specific cooling solution for its new, dedicated sheet pasta manufacturing line.
Maintaining the correct temperature at all times is vital to preserving the freshness and taste of the final pasta product and is critical to ensure that optimum standards of hygiene are preserved. The company contacted Coolmation, because of their experience in food process cooling applications.
Coolmation has provided one 80kW high efficiency air-cooled chiller for the site. This unit serves a heat exchanger which in turn is connected to the mains water supply feeding into the new production line. Water, cooled from this process, is injected with an antibacterial agent and sprayed onto sheets of cooked pasta. This provides a highly effective, crash cooling solution which rapidly reduces the temperature of the lasagne to below 5°C as it emerges from the cooking process. As a result, the pasta is taken out of the temperature range identified for optimal bacterial growth, before it enters the ‘high risk’ area where it is packaged.
The system is working well and the customer has since commissioned a second chiller to act as a back-up for the chilled water system during the summer months. Coolmation carried out the supply and installation of all pipework and associated equipment and components for the project.
